Chocolate Salted Caramel Cupcakes

Hi and welcome to Little Miss Holly. I made some Chocolate Salted Caramel cupcakes and I thought I would share the recipe with you. These taste amazing! Enjoy 🙂

Makes 12 cupcakes.

Ingredients

Chocolate cupcakes:

125g butter, at room temperature

150g or 2/3 cup brown sugar

2 eggs

100g of 75% dark chocolate, melted and cooled

190g or 1 1/4 cups of plain flour

2 tbsp cocoa powder

2 tsp baking powder

125 ml or 1/2 cups of milk

Salted caramel frosting:

250g unsalted butter at room temperature

1/3 cups (115g) golden syrup

75g (1/3 cup) brown sugar

1 1/2 tsp sea salt flakes, or to taste

250g (1 cup) icing sugar

Method:

Preheat oven to 180ºC (160ºC fan-forced). Line a 12-hole muffin tray with muffin paper cases.

Use an electric mixer to beat the butter and sugar, scraping down the sides of the bowl occasionally, until pale and creamy. Add the eggs one at a time, beating well after each addition. Beat in the cooled chocolate.

Sift together the flour, cocoa powder and baking powder. Use a large metal spoon or spatula to fold half the flour through the chocolate mixture. Fold in the milk and then the remaining flour mixture until just combined.

Spoon the mixture into the paper cases, dividing evenly. Bake in preheated oven for 25 minutes or until a skewer inserted into the centre of a cupcake comes out clean. Cool for 5 minutes in the tin, then transfer to a rack to cool completely (this will take about 30 minutes).

Meanwhile, to make the salted caramel frosting, use an electric mixer to beat the butter, golden syrup, brown sugar and salt until pale and creamy. Add the icing sugar and beat until smooth and very pale and creamy. Sprinkle each cupcake with a little extra sea salt flakes.

A Little Road Trip

Hi and welcome to Little Miss Holly. Just recently my family and I went on a little road trip. The places we travelled are Newcastle, Kiama, Canberra and Dubbo. Some of the things we did whilst on this holiday included, going to Dubbo Zoo, Parliament House, The Australian War Memorial, Questacon, many beaches and pretty much just exploring these places. DIY Dream Catcher

Hi and welcome to Little Miss Holly. First off I would just like to say, thank you so much for 100 followers. It really means a lot to me. This week I decided to make a dream catcher. It was quite easy but a bit fiddly at times. This is how to do it :).

What you will need:

– wire

– feathers

– ribbon / lace

– beads

– string (I used crochet cotton)

– pliers

– scissors 

– tape

– bowl / plate

What to do:

1. Grab a bowl or plate which is the size you want your dream catcher to be. Cut a piece of wire with the pliers so it fits around the plate. Once you’ve made the wire into a circle, tape it at the ends. 

2. With the crochet cotton, wrap it all the way around the wire. This does take quite a while.

3. Now it’s time to do the inside of the circle. This part is quite fiddly. I looked on Pinterest for directions on how to do it and I suggest doing that as well because it is quite hard to explain. I’ll leave a photo below which shows you how to do it. Don’t forget to put a bead in the centre. 

4. Lastly, you have to attach the lace and ribbon onto the bottom quarter of the dream catcher. I also joined on some feathers and beads. 

And your done! This DIY is fun to make and it also doesn’t take that much time.

Delicious Mug Cake Recipe

Hi and welcome to Little Miss Holly. Today I have a delicious recipe for you which is simple and is actually cooked in the microwave so it’s great for if you want to only make a single serve of yummyness. There is so many different recipes out there now for mug cakes but this one is one of my favourites. It’s a breakfast almond and berry cake with a yummy crumble in top. Enjoy 🙂

Here’s the recipe for an almond and berry breakfast mug cake: 

Ingredients

2 tablespoons soft butter

1 medium egg

1 tablespoon runny honey

3 tablespoons golden caster sugar

3 tablespoons ground almonds

1/2 teaspoon ground cinnamon 

3 tablespoons self-raising flour

Pinch of salt

3 tablespoons mixed berries

Streusel topping

2 teaspoons cold butter, finely chopped

1/2 tablespoon self-raising flour

1/2 tablespoon golden caster sugar

1 teaspoon rolled oats

Pinch of ground cinnamon

1/2 tablespoon almonds, roughly chopped

Method 

Place butter in a 350ml mug and microwave for 10-20 seconds until melted.

All the egg, honey and sugar to the mug and beat with a fork until combined.

Add the ground almonds, cinnamon, flour and salt and beat again until smooth. Fold through half the berries and then top with the remainder.

To make the streusel, place all the ingredients in a small bowl and rub together with your fingertips to bring together, a bit like breadcrumbs.

Spoon the streusel topping over the cake and cook in the microwave for 2 minutes 50 seconds @ 600W, 2 minutes 30 seconds @ 800 W or 2 minutes 10 seconds @ 1000W. Leave to cool slightly then serve.

I like to serve with fresh fruit on the top.

This recipe is from ‘Mug Cakes’ by Mima Sinclair. It’s a great book with over 40 cakes in it which you can make in the microwave!

Daily Fitness Routine

Hi and welcome to Little Miss Holly. Today I will be showing you my daily fitness routine. I’m not going to lie, I’ve only done this a couple of times and then forgotten about it for like 2 weeks, so I’m hoping by writing this post it will remind me to do this every day.

•Daily Fitness Routine•

20 sit ups

30 squats

20 forward lunges

20 back lunges

60 second wall sit

10 burpees

25 toes raises

15 push ups

60 second plank

80 star jumps

I know this looks like a lot but it actually goes really quickly.

I am planning to do this routine 1 to 2 times a day and after a while of doing it I will probably increase each step a little.

I have also been loving Lorna Jane Clarksons ‘Nourish, The Fit Woman’s Cookbook’ it has so many healthy recipes inside plus tips on active living.

DIY Face Mask and Body Scrub

Hi and welcome to Little Miss Holly. Today I will be giving you two recipes to have your own DIY pamper session at home. This avocado and honey face mask and brown sugar and honey body scrub are very easy to make and are cheap as well. This is a collab with Liveandlaugh03 and over on her blog there is even more recipes for a DIY pamper session.


This avocado and honey face mask is really easy to make. It feels so nice and refreshing when it’s on the skin and once you wash it off it feels a bit like the Oatfix fresh face mask from Lush, because it leaves an oily felling on your skin but it is hydrating.

What you need:

1/4 of an avocado

1 tsp honey

1 tsp coconut oil
What to do: 

Mash the avocado in a bowl, stir in other ingredients
Spread the face mask all over your face and leave on for 15 minutes. Wash of with water.

This brown sugar and honey body scrub makes your skin feel so smooth afterwards. This is a great gift. My measurements I made up, so just put as much as you want of each item, but this was the original recipe (I didn’t want to make this much)

Original recipe:

1 cup of brown sugar 

1/4 cup olive oil

1 tsp honey 

1 tsp vanilla extract
What to do: 

Mix all ingredients together in a bowl.
Apply onto damp skin and lightly scrub in circular motions.

Simple Chocolate Slice

Hi and welcome to Little Miss Holly. I made some chocolate slice on the weekend and I thought I would share the recipe with you. It tastes yummy, it’s simple to make and it doesn’t have that many ingredients in it. Enjoy 🙂

What you need:

2 x 200g packets of original Tim Tams

45g unsalted butter, chopped

1/3 cup (80ml) sweetened condensed milk

185g Jersey caramels, chopped coarsely (I couldn’t find any in the shops so I left them out)
Chocolate topping:

250g milk chocolate, chopped coarsely

2 teaspoons vegetable oil

Method

1. Grease 20cm X 30cm rectangular pan, line with baking paper.

2. Process half the biscuits until fine. Chop remaining biscuits coarsely.

3. Combine butter and condensed milk in small saucepan, stir over low heat until smooth.

4. Combine processed and chopped biscuits with caramels in medium bowl, stir in butter mixture. Press mixture firmly into pan. Refrigerate for 30 mins.

5. Chocolate Topping. Stir ingredients in small heatproof bowl over small saucepan of simmering water until smooth.

6. Spread chocolate topping over slice. Refrigerate for about 30 minutes or until firm.

Plant Room Decor

Hi and welcome to Little Miss Holly. I really like the look of plants in rooms, I fell like it softens the room and gives it a really nice touch. I suprisingly didn’t have and greenery in my room so I decided to do some DIY’s and I thought I would share them with you.

Firstly is this succulent in a tea light holder. I picked up the tea light holders from Pillow Talk on sale, they are a really cute geometric design and I got one white and one black. I put some dirt into the holders and stuck in a clipping of this succulent which I got from my garden. This one I chose because it’s a succulent and they don’t need much water.

This next one is sooo pretty. It’s basically just a vase with some really pretty flowers in them. This vase is also from Pillow Talk, there is many designs to choose from. I have the white one with the quote ‘Be Happy’ on it but others had different quotes and colours, this was also really cheap. I arranged flowers in it, I got them from a garden near by.

Last one is this Aloe Vera Plant in a mason jar. I’ve seen lots of pins in Pinterest of plants in mason jars so I decided to make my own. All you need is a mason jar/jar or a glass vase, soil, pebbles and a plant. I chose Aloe Vera because there is a lot of it in my garden and they are easy to look after. They need barely any water but lots of sun, so I will be placing it in different areas around my room so it can have as much sun as possible.

Winter Clothing Haul

Hi and welcome to Little Miss Holly. It’s starting to get a little bit colder here in Australia and I don’t really have that many winter clothes, so I went and did some shopping and I am going to show you some of the clothes I bought.

First off is this grey hoodie. I have pretty much lived in this jumper because it is so soft and warm. I also love the colour grey, which you will see through the rest of the haul because I got a lot of grey clothes. The word Puma is printed across the front and half of it is a spotty kind of pattern and the other half is I think floral, so it’s pretty at the same time. I bought this jumper in Amart Sports but you probably could find it in many other places as well.

Next is this grey cable knit jumper with a turtle neck. I’ve always liked the look of this type of jumper but I haven’t found one which I really like but this one was on sale from Ally Fashion so I thought I would get it. I’ve also never had a jumper with a turtle neck.

I saw this really cute top in Ally Fashion as well. It’s grey with black trim around the neck. A little bee with the words ‘Bee Nice’ is on the shirt, it’s so cute.

This jumper is also grey and it has a white collar on it. It’s the type of jumper which is meant to look like it has a tee shirt underneath it, although I wear it with the bottom part of the tee shirt tucked in. I’ve had this jumper for a while because my friend went on a holiday to England and she picked this jumper for me from the shop Primark. We really liked Peter Pan collars on clothes at the time but we couldn’t really find any.

I dance, and I needed some fitness leggings because my classes are at night time, and it’s pretty cold then. So I went into H&M and picked up these black ones with a pink band at the top. These legging are 3/4 length and are nice and stretchy.

Lastly is this grey dressing gown from Kmart. It’s super soft and comfy, I got it in the large so it would be big and cosy on me.
